    Pale straw green, the wine has lifted musk and tropical fruit aromas. Fruit flavours of pineapple, rock melon and guava flow onto the palate combining with delicate white spice notes providing a balanced finish.

    Harvested at night, and pressed immediately for cold settling. The clear juice was racked and fermented in stainless steel tanks before being fined and finished for bottling.

    Lifted passionfruit, gooseberry, kiwi fruit and tropical fruit salad aromas, with a clean and refreshing palate with juicy tropical fruit salad, lychee, passionfruit and green melon.

    The Sauvignon Blanc fruit was pressed, chilled before being transported to our winery in the Hunter Valley. Once the juice arrived it was inoculated with an aromatic yeast strain. The juice was fermented at cold temperatures in stainless steel tanks to preserve aromatic varietal flavours. When the fermentation was complete the wine was filtered and bottled fresh.

    Cockfighter's Ghost Shiraz 2014

    McLaren Vale

    Black cherry with rust red hues in colour, this wine has spicy plum and leather aromas, together with a palate bursting with ripe mulberry and black cherry flavours, which combine with fine soft tannins from French oak to provide structure and length.

    Harvesting took place in March 2014,the fruit was transported in the cool of night to our winery in Pokolbin where it was immediately crushed and fermented. Following fermentation the wine was matured in 300-litre French oak barrels, before bottling in November 2014.

    Cockfighter's Ghost Chardonnay 2014

    Hunter Valley

    Pale straw with green notes.Lifted aromas of honeydew melon and stone fruit with a hint of nutmeg. The palate has fresh fruit flavours of white peach and honeydew melon and a long line of fresh citrus acidity to balance.  Time in oak and lees contact give this wine complexity and a creamy mouth feel

    The grapes for this wine were taken from our Cockfighters Ghost vineyard in Broke, Hunter Valley.  The fruit was
    harvested and immediately whole bunch pressed followed by cold settling.  A portion was fermented at cool temperatures in stainless steel to retain freshness and varietal character.  The other portion was fermented in new, one and two year old French oak Hogsheads and remained in oak for 8 months before being blended with the unoaked parcel.

    Pale lime green in colour, the wine has lifted citrus blossom and lemon grass aromas. The finely structured palate offers tropical fruit and zesty pineapple flavours which combine with fresh acidity on the palate to provide a dry, well balanced finish.

    Handpicked and transported to our winery where it was lightly pressed, allowed to settle, racked clean and fermented at cool temperature. After fermentation sulphur was added to terminate the ferment, settled, lightly fined, stabilized and filtered ready for bottle.

    'The Legend' 2014

    Shiraz, Cabernet & Merlot

    Deep red with burgundy hues in colour. Red fruits, blackcurrant and blueberry with hints of cedar spice to the nose. A full bodied palate with juicy fruit flavours of blueberry, cherry and blackcurrant. The oak provides complexity and structure while velvety tannins complete the long, persistent palate.

    The fruit for our first red blend for Cockfighter’s Ghost was carefully selected from vineyards in McLaren Vale for Shiraz (40%) and Wrattonbully for the Cabernet (30%) and Merlot (30%) components. The fruit was transported to our winery in the Hunter Valley with fermentation in 5 tonne stainless steel fermenters, keeping each individual parcel separate before being pressed off to tank. The wine was matured in French oak barriques (225L) for 9 months before being carefully blended to create a wine with primary fruit power, texture and style.
