    The Sauvignon Blanc fruit was pressed, chilled before being transported to our winery in the Hunter Valley. Once the juice arrived it was inoculated with an aromatic yeast strain. The juice was fermented at cold temperatures in stainless steel tanks to preserve aromatic varietal flavours. When the fermentation was complete the wine was filtered and bottled fresh.

    Black cherry with rust red hues in colour, this wine has spicy plum and leather aromas, together with a palate bursting with ripe mulberry and black cherry flavours, which combine with fine soft tannins from French oak to provide structure and length.

    Harvesting took place in March 2014,the fruit was transported in the cool of night to our winery in Pokolbin where it was immediately crushed and fermented. Following fermentation the wine was matured in 300-litre French oak barrels, before bottling in November 2014.

    Pale straw with green notes.Lifted aromas of honeydew melon and stone fruit with a hint of nutmeg. The palate has fresh fruit flavours of white peach and honeydew melon and a long line of fresh citrus acidity to balance.  Time in oak and lees contact give this wine complexity and a creamy mouth feel

    The grapes for this wine were taken from our Cockfighters Ghost vineyard in Broke, Hunter Valley.  The fruit was
    harvested and immediately whole bunch pressed followed by cold settling.  A portion was fermented at cool temperatures in stainless steel to retain freshness and varietal character.  The other portion was fermented in new, one and two year old French oak Hogsheads and remained in oak for 8 months before being blended with the unoaked parcel.

    Handpicked and transported to our winery where it was lightly pressed, allowed to settle, racked clean and fermented at cool temperature. After fermentation sulphur was added to terminate the ferment, settled, lightly fined, stabilized and filtered ready for bottle.

    Deep red with burgundy hues in colour. Red fruits, blackcurrant and blueberry with hints of cedar spice to the nose. A full bodied palate with juicy fruit flavours of blueberry, cherry and blackcurrant. The oak provides complexity and structure while velvety tannins complete the long, persistent palate.

    The fruit for our first red blend for Cockfighter’s Ghost was carefully selected from vineyards in McLaren Vale for Shiraz (40%) and Wrattonbully for the Cabernet (30%) and Merlot (30%) components. The fruit was transported to our winery in the Hunter Valley with fermentation in 5 tonne stainless steel fermenters, keeping each individual parcel separate before being pressed off to tank. The wine was matured in French oak barriques (225L) for 9 months before being carefully blended to create a wine with primary fruit power, texture and style.

    Harvested during the cool of the night, grape temperatures were kept to a minimum to retain maximum freshness and fruit integrity. The grapes were crushed and fermented at our winery in Pokolbin. Following fermentation, the wine was transferred to French oak barrels for two years, before bottling.

    The fruit is harvested at night and pressed gently to retain fruit freshness. Cold settled and fermented cool, once complete undergoes 100% malolactic fermentation and remains on lees for 10 months. This base wine is then bottle fermented and spends a further 3 years on tirage yeast lees to add further complexity and creaminess to the wine.

    This wine has been produced from Merlot grapes from Wrattonbully and Cabernet Sauvignon from Langhorne Creek, South Australia. The grapes were picked and transported to our winery in the Hunter Valley. Both parcels were treated similarly, it was immediately crushed and cold soaked for 5 days and then fermented in 7 tonne tanks for 10 days with gentle pump overs 3 times a day. The wine pressed off skins and put to French oak to undergo maturation for 12 months before being blended, filtered and bottled.

    The grapes for this wine were taken from our Cockfighter’s Ghost vineyard in the Broke sub-region of the Hunter Valley. The fruit was hand picked in the early morning and immediately whole bunch pressed and cold settled. The juice was racked clean and then fermented at cool temperatures in a stainless steel to retain varietal character and freshness. Upon completion of fermentation the wine was gently fined, filtered and bottled early.

    The grapes for this wine were taken from our historic 50+ old
    Shiraz vines on our Pooles Rock ‘Post Office’ vineyard. The
    fruit was hand picked in the early morning and immediately
    crushed and cold soaked for 4 days. The fruit was then
    fermented in traditional 2 tonne open pots over 10 days
    with plunging 2 times a day. The wine was pressed and put
    to a 2500 litre French oak ‘Foudre’ or large vat to undergo
    maturation for only 6 months in order to retain varietal fruit
    character and freshness.

    Hand harvested, crushed and de-stemmed to press. Only the pure free run juice was maintained for the reserve ferment. The juice was fermented between 12 – 14’C for 12 day. Post fermentation the wine was fined, filtered and bottled fresh and zesty.

    The Pinot Noir fruit was handpicked and transported to our winery in the Hunter Valley for processing. The Fruit was crushed into small two tonne open topped fermenters with a portion of the fruit remaining as whole bunches. Following 10 days of fermentation, the must was gently pressed off and transferred to french oak barriques. After 10 months of maturation the wine was blended and bottled.

    The fruit for this wine was hand harvested in late February before being immediately crushed and de-stemmed to small open fermenters with plunging 3 times a day. Fermentation lasted 8 days, before it was pressed and put to French oak for malolactic fermentation and maturation for a further 14 months. Post maturation the wine was fined, filtered and bottled.
